Sauce and Meatballs


3/4 C. Olive Oil
12 Italian Sausages
2 Onions, chopped
6 28-oz. Cans of Pastene Kitchen Ready Tomatoes
2 Tbsp. Salt
2 Tbsp. Sugar
3 Bay Leaves
2 Tbsp. Basil
3/4 C. Grated Parmesan Cheese
1 6-oz. Can of Tomato Paste

2 lbs. Meat Mixture (Pork, Veal & Beef)
2 Eggs, well beaten
2 C. Italian Breadcrumbs
1/2 C. Olive Oil
2 Clove Garlic, minced
1/4 C. Water



  1. Heat olive oil in a large sauce pot over medium heat
  2. Add sausage and brown, turning occasionally
  3. Add onion and cook until translucent
  4. Slowly add tomatoes
  5. Add salt, sugar, bay leaves, basil, cheese and tomato paste
  6. Cover sauce pot and simmer over very low heat about 2 hours
  7. Continue cooking, uncovered, about 2 hours or until thickened
  8. Add meatballs about 20 minutes before sauce is done


  1. Mix meat, egg, cheese and bread crumbs together lightly
  2. Shape meat mixture into 1 inch balls
  3. In large skillet, heat oil and garlic
  4. Add meatballs and brown on all sides, turning occasionally
  5. Add meatballs to tomato sauce about 20 minutes before sauce is done

Meatballs recipe makes about 50 meatballs. Sauce recipe makes about 6 servings. Serve with pasta — I prefer ziti or rigatoni.
